Terroir
Viticulture
The vines are between 5 and 6 years old and were planted by Baptiste. Premium vine stocks 100% in massal selection. from Lilian Bérillon. Soil work with our draft horsesImplementation of a vegetative cover every other row. Our yield is 35 hl/ha, ensuring good berry concentration.
Harvest
Our harvest is done entirely by hand and are collected in small crates to preserve the integrity of the fruit. After the harvest, we keep the grapes in a refrigerated container overnight before direct low-pressure pneumatic pressing. The harvest took place on August 22 for the Chardonnays, and the next day for the other grape varieties.
Vinifications
The harvest is destemmed before low-pressure pneumatic pressing. Static cold settling (constant 15°C). Fermentations using indigenous yeasts. Thermal regulation of alcoholic fermentation (17°C) in stainless steel tanks separated for each grape variety. Blending after fermentation. Aging on fine leses. No stirring, malolactic fermentation blocked. Bottling on February 17th, 2024.

Tasting
Wine with delicious notes of caramel and frangipani flower with a hint of floral. It fully expresses itself when served between 9 and 11°C. Best consumed within 2 to 3 years.
