Terroir
Viticulture
Soil work with our draft horsesImplementation of a vegetative cover every other row. The age of the vines ranges from 5 to 50 years. Our yield is 25 hl/ha, ensuring good berry concentration.
Harvest
Our harvest is done entirely by hand and are collected in small crates to preserve the integrity of the fruit. Grenache and Mourvèdre were picked on September 7, Carignan on September 12, allowing each grape variety to reach its optimal maturity.
Vinifications
We kept the stems of the Carignan to gain structure and freshness. Indigenous yeasts only. The wine was pressed in a traditional 50-liter wooden press then aged for 10 months in demi muids and barriques from the year 2018. Bottling took place on February 17th, 2024.
Tasting
This wine shows great suppleness with beautiful notes of licorice, plum, and blackcurrant. It fully expresses itself when served between 18 and 20°C. With an estimated aging potential of 10 years,this wine promises an evolution developing complex aromas of prune and leather over time.
