Terroir
Viticulture
The Grenache vines are 20 years old, the Rolle and Syrah are 4 years old, and were planted by Baptiste. Soil work done with our draft horsesImplementation of a vegetative cover every other row. Our yield is 35 hl/ha, ensuring good berry concentration.
Harvest
Our harvest is done entirely by hand and are collected in small crates to preserve the integrity of the fruit. After the harvest, we keep the grapes in a refrigerated container overnight before direct low-pressure pneumatic pressing. The harvest took place on August 28th for the Syrah and Rolle, on August 30th for the Grenache.
Vinifications
The harvest is destemmed before low pressure pneumatic pressing . All the red grape varieties are pressed together, then all the white varieties together. Static cold settling (constant 15°C). Thermal regulation of alcoholic fermentation (17°C) in stainless steel tanks. Aging on fine lees with 4 to 5 stirrings to reveal the aromas. Loose filtrations. Bottling on February 16th, 2024.
Tasting
Very fine and round on the palate. Pronounced notes of lemon and lime. It fully expresses itself when served between 9 and 11°C. Best consumed within the year.
